Method
 

  1. Preheat your oven: Start by preheating your oven to 350°F (175°C).
  2. Combine dry ingredients: In a large mixing bowl, whisk together 1 cup + 3 tbsp all-purpose flour, 2 tsp baking powder, 1/2 tsp salt, 3/4 cup granulated sugar, 1 tsp cinnamon, 1/2 tsp nutmeg, and 1/2 tsp cloves until well combined. This mixture will provide the base for your cobbler.
  3. Mix wet ingredients: In another bowl, combine 1/2 cup pumpkin puree, 1/4 cup milk, 1/4 cup melted butter or oil, and 1 1/2 tsp vanilla. Mix thoroughly until smooth.
  4. Combine wet and dry ingredients: Slowly pour the wet mixture into the dry ingredients, stirring gently until just combined. The batter will be thick; pour it into an 8-inch casserole dish, spreading it evenly.
  5. Prepare the topping: In a small bowl, mix together 1/2 cup granulated sugar, 1/2 cup brown sugar, and 1/4 cup chopped pecans. Sprinkle this mixture evenly over the batter in the casserole dish.
  6. Add hot water: Carefully pour 1 1/2 cups very hot water over the topping without stirring it in. This will create a delicious layer as it bakes.
  7. Bake: Place the casserole dish in the preheated oven and bake for 40 minutes, or until the cobbler is set and a toothpick inserted in the center comes out clean.
