Heat 2 tablespoons vegetable oil in a large pan or wok over medium-high heat until hot.
Pour in the 4 large beaten eggs and stir-fry them until they are just set but still moist. This should take about 1-2 minutes.
Add in 2 cups cooked jasmine rice, breaking up any clumps as you combine it with the eggs. Stir thoroughly to ensure even distribution.
Once the rice and eggs are well mixed, move them to one side of the pan to create space. Add a little more oil if necessary, and toss in the 1 chopped green onion.
Drizzle the 2.5 tablespoons soy sauce and ½ tablespoon sesame oil around the edges of the pan. Stir the rice in until it’s evenly colored by the soy sauce.
Remove from heat, serve hot, and enjoy your homemade Egg Fried Rice!
