Quick and Delicious Egg Fried Rice

Quick and Delicious Egg Fried Rice: savory stir-fried rice with eggs and vegetables, perfect as a side or main dish for a satisfying meal.

Ingredients
  

  • 2 cups cooked jasmine rice preferably cold, day-old: Jasmine rice is the star of this dish, providing a fragrant base that complements the eggs and other flavors. Using cold, day-old rice ensures the grains remain separate and don’t clump together during cooking.
  • 1 green onion finely chopped: This ingredient adds a fresh, mild onion flavor and a pop of color, making the dish visually appealing.
  • 2.5 tablespoons regular soy sauce: Soy sauce is crucial for seasoning the rice providing a savory depth and umami flavor that enhances the entire dish.
  • ½ tablespoon sesame oil: This oil adds a nutty richness elevating the overall taste to a whole new level.
  • 4 large eggs beaten: The eggs are what will bind the dish together and provide a creamy texture, making it more filling and nutritious.
  • 2 tablespoons vegetable oil or any neutral oil: This oil is used for frying and is key in achieving that delightful stir-fry effect, imparting a crispiness to the rice and eggs.

Method
 

  1. Heat 2 tablespoons vegetable oil in a large pan or wok over medium-high heat until hot.
  2. Pour in the 4 large beaten eggs and stir-fry them until they are just set but still moist. This should take about 1-2 minutes.
  3. Add in 2 cups cooked jasmine rice, breaking up any clumps as you combine it with the eggs. Stir thoroughly to ensure even distribution.
  4. Once the rice and eggs are well mixed, move them to one side of the pan to create space. Add a little more oil if necessary, and toss in the 1 chopped green onion.
  5. Drizzle the 2.5 tablespoons soy sauce and ½ tablespoon sesame oil around the edges of the pan. Stir the rice in until it’s evenly colored by the soy sauce.
  6. Remove from heat, serve hot, and enjoy your homemade Egg Fried Rice!
  7. Cooking Tips: Always ensure your rice is cold; freshly cooked rice can become mushy. Stir-frying over high heat helps achieve that ideal texture.
