Prep the ingredients: Start by dicing 2 medium zucchinis and 1 small onion. Mince 2 cloves of garlic and set all the veggies aside.
Cook the turkey: In a large skillet, heat 1 tbsp of olive oil over medium heat. Add 1 lb of lean ground turkey and cook until browned, approximately 5-7 minutes. Remember to break the turkey into smaller pieces as it cooks. Once browned and fully cooked, remove it from the skillet and set it aside.
Sauté the aromatics: In the same skillet, add the diced onion and minced garlic. Sauté for about 2-3 minutes, or until they become fragrant and the onion is translucent.
Add zucchini: Next, add the diced zucchini to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the zucchini is slightly tender but still crisp.
Combine ingredients: Reintroduce the cooked ground turkey to the skillet. Season with 1 tsp paprika, salt, and pepper to taste. If you like heat, sprinkle in ¼ tsp chili flakes. Mix everything together and cook for an additional two minutes to heat through and blend the flavors.
Garnish and serve: Optionally, top the skillet with ¼ cup grated Parmesan cheese or a squeeze of fresh lemon juice. For a fresh touch, add chopped parsley or basil as a garnish before serving.
