Ingredients

  • 1 lb boneless skinless chicken thighs
  • 1/2 tablespoon soy sauce
  • 1/2 tablespoon avocado oil
  • 1 clove garlic (grated) (or 1 tsp of garlic paste, or 1/2 teaspoon garlic powder)
  • 2-3 tablespoons taco seasoning (I use Siete brand)
  • 1/2 cup mayo
  • 3 oz cotija cheese chunk
  • 1 handful cilantro stems and leaves roughly 1/2 cup
  • 1 clove garlic
  • 1-2 tablespoons lime juice (from 1-2 limes)
  • 2 tablespoons water (more as needed)
  • Tortillas
  • Limes, cilantro, and onion for topping

Equipment

  • 1 Air Fryer
  • 1 Food Processor (for sauce preparation)

Method

  1. Trim the fat off the chicken thighs if you want. Toss the chicken thighs with soy sauce, oil, and grated garlic. Sprinkle with taco seasoning and give it a quick mix.
1/2 tablespoon soy sauce, 1/2 tablespoon avocado oil, 1 clove garlic (grated), 2-3 tablespoons taco seasoning, 1/2 cup mayo
  2. Place the chicken in the basket of an air fryer. Air fry at 400 degrees for 10-12 minutes until golden and juicy.
    1/2 tablespoon soy sauce
  3. While the chicken is cooking, blitz up the sauce ingredients in a small food processor or blender. Adjust consistency with more water or mayo.
  4. Once the chicken is done, let it cool for a few minutes, then roughly chop it. Squeeze lime juice over the chicken. Add a dollop of sauce into a tortilla, a pile of chicken, and finish with cilantro and onion.
3 oz cotija cheese, 1 handful cilantro stems and leaves
