Savor the comforting flavors of red beans and rice in this delightful recipe. A perfect combination of savory spices and wholesome goodness.

Ingredients

  • 3 Cups Dried Red Beans: The star of the dish red beans are known for their creamy texture and rich flavor. Soaking them overnight enhances their digestibility and reduces cooking time.
  • 1 Tablespoon Oil: Cooking oil is crucial for sautéing the onions and flour helping to build the flavor base of the dish. Olive oil or canola oil works best.
  • 1 Tablespoon Flour: Flour is used to create a roux which adds thickness and depth to the dish while also imparting a rich flavor.
  • 2 Cups Chopped Onions: Onions are essential for the flavor foundation; they caramelize beautifully and add sweetness to the dish.
  • 1 Pound Turkey Sausage: This healthier alternative to pork sausage provides a savory flavor that complements the beans perfectly. Choose a well-seasoned turkey sausage for the best results.
  • 2 Tablespoons Tony’s Original Creole Seasoning: This signature spice blend enhances the dish with its complexity and heat bringing the essence of Louisiana cuisine to your kitchen.
  • 4 Cups Chopped Green Onions: Used as a garnish green onions add a fresh crunch and vibrant color to the dish, elevating its presentation.

Method

  1. Soak the Beans: Begin by soaking 3 cups of dried red beans in a large pot of water overnight. After soaking, drain and rinse the beans thoroughly to remove any residual starch.
  2. Prepare the Base: Heat 1 tablespoon of oil in a deep pot over low heat. Add 2 cups of chopped onions and 1 tablespoon of flour. Stir frequently and cook until the onions become light brown and fragrant, which should take about 10 minutes.
  3. Add the Sausage and Beans: Stir in 1 pound of turkey sausage, breaking it up as it cooks. Allow it to brown slightly before adding the soaked beans to the pot.
  4. Season and Simmer: Pour in enough water to cover the beans, then season with 2 tablespoons of Tony’s Original Creole seasoning. Bring the mixture to a gentle simmer, then cover the pot and let it cook slowly for about an hour. Stir occasionally, ensuring that the beans do not stick to the bottom of the pot.
  5. Serve the Dish: After an hour, check the beans for tenderness. They should be creamy and soft. Serve the warm mixture over steamed rice and finish with a generous topping of 4 cups of chopped green onions for added freshness and crunch. Enjoy your comforting bowl of Red Beans and Rice!
