Fry the scallion pancake: In a frying pan, heat a spritz of avocado oil or a small pat of butter over medium heat. Place the scallion pancake in the pan and fry until golden on both sides, which should take about 2-3 minutes per side. Once done, remove the pancake and set it aside.
Wilt the spinach: In the same pan, add the handful of spinach and stir it around until it begins to wilt, about 1-2 minutes. Move the spinach to the center of the pan, creating space for the eggs.
