Stir in 2 (15 oz) cans tomato sauce and 1 tsp Italian seasoning. Allow the mixture to simmer for about 5 minutes, seasoning with Kosher salt and freshly ground black pepper to taste.
Cook Noodles: In a separate pot, cook the 8 oz egg noodles according to package instructions. Once cooked, drain the noodles well and set aside.
Combine Dairy Mixture: In a mixing bowl, combine 1 cup sour cream and 1 cup cottage cheese. Mix well, then add the drained egg noodles. Season with a pinch of salt and pepper, ensuring the noodles are evenly coated.
Layer the Casserole: In your greased baking dish, spread half of the egg noodle mixture evenly on the bottom. Next, layer half of the meat sauce on top. Repeat the process with the remaining noodles and meat sauce, ensuring even distribution.
Add Cheese and Bake: Finally, sprinkle 1 cup grated cheddar cheese evenly over the top of the casserole. Place the dish in the preheated oven and bake for approximately 30 minutes or until the casserole is bubbly and the cheese has developed a lovely golden brown color.
Cool and Serve: Once done, remove the casserole from the oven and let it cool for about 10 minutes before serving to allow the layers to set. Enjoy your hearty meal!
