Strawberry Watermelon Salad with Burrata

Finished with a drizzle of balsamic fig vinaigrette...quick, refreshing, pretty, AND delicious!

Ingredients
  

  • 4 cups cubed watermelon
  • 2 cups fresh strawberries, halved
  • 1 cup sliced Persian cucumbers
  • to taste fresh basil leaves, roughly torn
  • to taste handful fresh mint
  • 8 ounces burrata cheese, at room temperature
  • 1/4 cup roasted pistachios, chopped
  • 1/4 cup extra virgin olive oil
  • 1/4 cup balsamic vinegar
  • 1 tablespoon fig preserves/jam
  • 1/4 cup fresh basil, chopped
  • to taste kosher salt and black pepper
  • 2 teaspoons honey
  • 1/2 teaspoon kosher salt
  • 1 red onion, thinly sliced
  • 1 serrano pepper, thinly sliced

Method
 

  1. In a salad bowl, arrange the melon, strawberries, cucumber, and basil leaves.
  2. To make the vinaigrette, combine all ingredients in a glass jar and shake, or whisk to combine. Season with salt and pepper.
  3. Drizzle half the vinaigrette over the salad, gently tossing to coat.
  4. Add the burrata, pistachios, and the remaining vinaigrette. Top the salad with additional herbs and pickled onions.
  5. To make the pickled onions, combine the vinegar, honey, and salt in a glass jar. Add the onion and serrano pepper. Cover and let sit at least 30 minutes or up to 2 weeks in the fridge.
