Preheat your grill: Start by heating your grill to high (approximately 400+ degrees Fahrenheit) so that it’s ready for cooking.
Prepare the lobster tails: Using kitchen scissors, carefully cut the top of the lobster tail shell down to the tip, ensuring you do not slice through the meat. Devein and remove any grit from the tail.
Open the tail: Gently pull the shell down, allowing the meat to rest on top of the shell. This will create an appealing appearance while cooking.
Optional lemon addition: For extra zest, you can place lemon wedges beneath the lobster meat.
Make the butter mixture: In a small pot, combine 2 tablespoons of fresh lemon juice with 1 ½ tablespoons of butter, a pinch of Celtic sea salt, ½ teaspoon of white pepper, 1 teaspoon of garlic powder, and 1 teaspoon of smoked paprika. Heat gently until the butter melts and the mix is well combined.
Apply the butter: Brush half of the butter mixture over the lobster tails. Reserve the remaining mixture for basting during grilling.
Grill the lobster tails: Place the tails on the grill, shell-side down. Cook for approximately 4 minutes on one side, then flip them over while basting with the remaining butter mixture.
Check for doneness: Grill until the lobster meat turns bright white and opaque, reaching an internal temperature of 135-140 degrees Fahrenheit.
Serve: Remove from the grill and serve immediately with warm drawn butter for dipping or drizzling!
