Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 large eggs (room temperature)
  • 1 cup buttermilk
  • 1 tsp vanilla extract
  • 1 cup chopped pecans (toasted)

Method
 

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a medium bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, beat the eggs until fluffy; then mix in buttermilk and vanilla.
  4. Gradually fold the wet ingredients into the dry mixture until just combined, then gently fold in the toasted pecans.
  5. Pour batter into the prepared pan and bake for 50-60 minutes or until a toothpick inserted comes out clean.
  6. Allow to cool in the pan for 10 minutes before transferring to a wire rack.
