- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a medium bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, beat the eggs until fluffy; then mix in buttermilk and vanilla.
- Gradually fold the wet ingredients into the dry mixture until just combined, then gently fold in the toasted pecans.
- Pour batter into the prepared pan and bake for 50-60 minutes or until a toothpick inserted comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack.
