Method
- Preheat the oven to 350 degrees F. Line an 8x8 inch square pan.
- In a medium pot, add the sugar and lime zest, then rub the mixture together for about 30 seconds. Add lime juice, eggs, and flour, and whisk until combined. Set aside.
- In a bowl, mix almond flour, coconut oil, maple syrup, vanilla extract, and salt until crumbly. Press into the pan and bake for 8-9 minutes until golden. Remove and set aside.
- Whisk lime mixture over medium-low heat until thick (6-8 mins). Pour over a sieve into a bowl, stir in butter and green food dye. Pour over crust and bake for 8-11 mins until set.
- Cool bars for 1-2 hours at room temperature, then chill for at least 6 hours. Dust with powdered sugar and cut into 16 bars.

These lime bars can easily be made gluten-free and dairy-free.
