Ingredients
  

  • 1 mini seedless watermelon rind removed and cubed
  • 1 cup blueberries rinsed and thoroughly drained
  • ½ cup feta cheese crumbles
  • Mint leaves optional
  • 2 tbsp lemon juice
  • 2 tbsp extra virgin olive oil
  • 1 tsp sugar
  • ¼ tsp salt

Method
 

  1. Place watermelon and blueberries in a large bowl.
  2. Combine all dressing ingredients in an empty bottle. Put the lid on and give it a good shake.
  3. Drizzle vinaigrette over fruits.
  4. Sprinkle feta cheese and mint leaves (if using) on the top.
  5. Serve immediately.
