Prepare the Base:
- In a medium bowl, combine 1 cup of almond flour, 2 tbsp melted butter, and 1 tbsp sugar. Mix until well combined. Press this mixture firmly into the bottom of your molds to create a solid base. Chill in the refrigerator for 10 minutes to set.
Create the Domes:
- Melt 10 oz of white chocolate in a microwave-safe bowl in 30-second intervals, stirring in between until smooth. Using a spoon, coat the insides of your molds with the melted chocolate, ensuring you cover the entire surface. Chill in the refrigerator until hardened, approximately 15-20 minutes.
Make the Filling:
- In a mixing bowl, beat together 8 oz of softened cream cheese, 1/4 cup powdered sugar, and 1 tsp vanilla extract until smooth. Gently fold in 1/4 cup of strawberry puree until you achieve a light pink mixture.
Assemble Bites:
- Once the chocolate domes are set, carefully remove them from the molds. Fill each dome with the cheesecake filling, using a piping bag if desired, then top with the chilled cookie base pressing down gently. Chill again for 20 minutes to allow the flavors to meld.
Prepare Glaze:
- In a small saucepan, combine 1/2 cup of strawberry puree, 2 tbsp powdered sugar, and 1 tsp of lemon juice. Heat over medium-low until thickened, stirring frequently. Allow the glaze to cool slightly before using.
Decorate:
- Once the bites are ready, flip them onto a serving platter, drizzle with the prepared glaze, and sprinkle over white chocolate shavings. You can also top with fresh strawberry pieces for a vibrant finish.
Serve:
- For optimal enjoyment, chill the bites for an additional 10-15 minutes before serving. This allows the flavors to meld beautifully and the texture to firm up.
