  2. Prepare the zucchini mixture: In a large mixing bowl, combine 2 medium zucchinis (grated), 2 cloves garlic (minced), 2 large eggs, 1 tsp oregano, ½ tsp salt, and ¼ tsp black pepper. Use a fork to mix everything until well combined.
  3. Add the dry ingredients: Stir in 1 cup bread crumbs and ½ cup Parmesan cheese (grated) until the mixture becomes sticky enough to hold together.
  4. Shape the bites: Take about a tablespoon of the mixture and shape it into small bites or patties. It helps to keep your hands slightly damp to prevent sticking.
  5. Fry the bites: Heat a generous amount of olive oil in a large skillet over medium heat. Carefully place the bites into the hot oil, frying them for about 3-4 minutes on each side, until they achieve a golden-brown color.
