  • 1/2 cup green onions, chopped for garnish: Provides freshness and a nice color contrast.
  • Tortilla chips, for serving: Perfect for scooping up the cheesy goodness!

Instructions

  1. Preheat and Prepare: Set your oven to 350°F (175°C). Prepare a baking dish by lightly greasing it.
  2. Cook the Meat: In a skillet over medium heat, brown 1 pound of ground beef together with 1 diced medium onion and 2 cloves minced garlic. Cook until the beef is no longer pink, then drain any excess grease.
  3. Mix in Creaminess: Lower the heat, and blend in 1 (8 oz) package of softened cream cheese and 1 cup of sour cream. Stir until the mixture is smooth and well combined.
  4. Add Flavors: Add in 1 (10 oz) can of drained diced tomatoes with green chilies, 1 (15 oz) can of refried beans, 2 teaspoons of chili powder, 1 teaspoon of cumin, 1/2 teaspoon of salt, and 1/2 teaspoon of black pepper. Stir until everything is evenly combined, creating a flavorful filling.
  5. Bake: Transfer the mixture into your prepared baking dish. Top with 2 cups of shredded cheddar cheese and bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden brown.
  6. Garnish and Serve: Once out of the oven, sprinkle with 1/2 cup of chopped green onions for a burst of freshness. Serve hot with tortilla chips for dipping.
