Caramelized Apricot & Ricotta Tartine Recipe

This summery tartine is as delicious as it is colorful!

Ingredients
  

  • 6-7 small apricots, cut in half, pit removed
  • 4 slices rustic bread
  • 1/2 to 3/4 cup fresh ricotta cheese
  • to taste Fresh rosemary
  • 1 shallot, sliced thin
  • 1 lemon
  • to taste softened butter
  • to taste olive oil
  • to taste salt and pepper
  • to taste hot honey

Method
 

  1. Drizzle some oil in a skillet, and place the apricots cut-side down into the pan. Cook until tender and they have started to caramelize. Add fresh rosemary for flavor.
    4 slices rustic bread, 1/2 to 3/4 cup fresh ricotta cheese
  2. In a separate pan, caramelize the shallots in olive oil until golden. Remove from the heat and put into a bowl.
    1 shallot, sliced thin
  3. Butter one (or both) sides of the bread and fry or grill until golden brown.
    1/2 to 3/4 cup fresh ricotta cheese, to taste olive oil
  4. Add lemon juice and zest to the ricotta cheese and whip until smooth.
    to taste Fresh rosemary, to taste softened butter
  5. Spread ricotta on the toasted bread, layer with caramelized apricots and shallots, then drizzle with hot honey.
    1/2 to 3/4 cup fresh ricotta cheese, to taste Fresh rosemary, 1 lemon, to taste hot honey

Notes

Serve immediately for best flavor.
