Delicate Lychee Rose Macarons Made with Real Lychees

Ingredients
  

  • 130 grams almond flour
  • 130 grams icing sugar
  • 100 grams egg whites
  • 90 grams granulated sugar
  • 1/4 tsp cream of tartar
  • 2 1/2 tsp corn starch
  • 90 ml strained juice from lychee puree
  • 50 grams white chocolate
  • 195 grams butter at room temperature
  • 2 1/2 tsp rose water
  • A few drops rose extract

Method
 

  1. Follow the instructions on the Best Macaron Recipe to make the shells.
  2. Set butter out at room temperature.
  3. Pulse whole lychees in food processor until you get a fine puree and strain.
  4. Dehydrate the pulp overnight if possible.
  5. Chop up white chocolate and make the filling with lychee juice and butter.
  6. Prepare the buttercream and assemble the macarons.

Notes

Allow the macarons to mature in the fridge for 24 hours for best flavor.
