Method
- Follow the instructions on the Best Macaron Recipe to make the shells.
- Set butter out at room temperature.
- Pulse whole lychees in food processor until you get a fine puree and strain.
- Dehydrate the pulp overnight if possible.
- Chop up white chocolate and make the filling with lychee juice and butter.
- Prepare the buttercream and assemble the macarons.
Notes
Allow the macarons to mature in the fridge for 24 hours for best flavor.
