Ingredients
  

  • 1 3/4 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon kosher salt
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 cup hot coffee
  • 1/2 cup water
  • 2 tablespoons dried hibiscus flowers
  • 8 ounces cream cheese
  • 1/2 cup unsalted butter
  • 3 1/2 cups confectioner's sugar
  • a pinch kosher salt

Method
 

  1. Preheat the oven to 350°F. Prepare two 8-inch round cake pans.
  2. Combine dry ingredients in a mixer and mix on low speed.
  3. Mix wet ingredients in a separate bowl and combine with dry ingredients.
  4. Pour batter into prepared pans and bake for 35 to 40 minutes.
  5. Cool cakes and wrap them in plastic wrap, chilling for at least 2 hours.
  6. Prepare hibiscus tea and strain it.
  7. Beat cream cheese and butter, incorporate sugar, and add hibiscus tea.

Notes

This cake is best enjoyed chilled. Serve with fresh berries for added flavor.
