Roasted Cabbage recipe with Parmesan and Walnuts

Ingredients
  

  • 1 medium cabbage, sliced and chopped
  • 2-3 tbsp extra virgin olive oil
  • 1 1/2 tsp paprika
  • 1 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/2 tsp coarse sea salt
  • to taste pepper
  • 1/4 cup parmesan or gouda cheese
  • 1/3 cup chopped walnuts
  • 3 tbsp chopped parsley

Method
 

  1. Preheat the oven to 425 degrees F.
  2. Place the chopped cabbage on a large baking sheet. Drizzle it with the extra virgin olive oil and sprinkle on paprika, garlic powder, onion powder, salt and pepper.
  3. Toss the cabbage with tongs to ensure it is fully coated with oil and seasonings.
  4. Place it in the oven for 10 minutes. Remove and toss again before returning for another 10 minutes.
  5. When done, place in a bowl and top with cheese, walnuts, and parsley before serving.
