Ingredients
  

  • cup lime juice freshly squeezed
  • ¼ cup pineapple juice no sugar added
  • 2 tablespoons Worcestershire sauce
  • 3 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 2 teaspoons ground cumin
  • 2 teaspoons chili powder (or more to taste)
  • 1 teaspoon kosher salt
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes (or more to taste)
  • ¼ cup chopped cilantro
  • 1.5 - 2 pounds skirt or flank steak
  • 1 tablespoon high heat oil
  • 2 medium white onions sliced
  • 1 large poblano ribs and seeds removed then sliced
  • 2-3 pieces bell peppers thinly sliced (any color)

Equipment

  • 1 Cast Iron Skillet For grilling the steak

Method
 

  1. Combine the ingredients for the marinade in a bowl or zip-top bag. Marinate the steak for 2-4 hours or overnight.
  2. Heat a skillet or grill over high heat. Cook the steak for 3-5 minutes per side, then let it rest.
  3. Sauté onions, poblano, and bell peppers in the same pan until they are soft.
  4. Slice the steak against the grain into thin strips.
  5. Serve in tortillas or with rice, adding your favorite toppings.

Notes

Marinate overnight for best flavor.
